If you’re interested in learning more about California’s egg farmers and the industry in general, I recommend reaching out to The Association of California Egg Farmers (ACEF).
The ACEF is a voluntary trade association that has been operating since 2009. They support and help California’s egg farmers better understand and follow food safety regulations.
They provide some interesting statistics on the egg farming industry in California, and are proactive about
Where Are Eggs Grown in California?
The egg farming industry is huge in California, there are egg farms all across the state so you shouldn’t have to travel too far to find an egg supplier.
Something interesting to note is that Proposition 2 was voted into law in 2008. This law prohibits the confinement of egg-laying hens and other livestock, enabling them to roam around more freely.
By 2025 California egg farmers have to be in 100% compliance with Proposition 2.
This was a huge step forward in the welfare of chickens in California - and the best part means the standard of eggs will only improve!
It’s estimated that there are around 14 million hens in California, that’s around one hen per three residents.
Each hen lays around 300 eggs per year, so the rough math means approx 4.2 billion eggs are produced and consumed in California every year.
That’s a lot of eggs!
What Makes a Good Egg Farm?
The quality and taste of an egg doesn’t depend on the breed of chicken, it depends on the environment and living conditions of the hen that laid it.
There is a saying in the egg industry, “the happier the hen, the healthier they are, the healthier they are, the better their eggs.”
It makes perfect sense. But what exactly makes a hen happy and healthy?
The basic needs of healthy hens are; good quality nutrition, excellent living conditions, and plenty of space to roam.
Ideally, hens should be able to roam free-range as much as they like. When choosing an egg farm to buy from, this is the first thing I’d check.
In addition to having plenty of space, hens' living conditions should be excellent. This means they're safe from the threat of predators, have plenty of space, are warm enough, their coop is kept clean, etc.
The taste of an egg is also related to what a hen eats, which shouldn’t come as a surprise.
You can’t always check what commercial food hens are being given, but knowing they’re able to roam free-range and graze on bugs and plants is a huge plus.
If you’re after the best tasting eggs - and you really should be - you should always visit an egg farm in person before buying from them.
Most farms welcome this, and it’s a great way to see for yourself how they’re running their business and caring for their hens.
